Abstract: The purpose of the present investigation was to obtain furfural from the residue of avocado, after the extraction of oil, which up till now has not been utilized. The above residue was investigated in relation to its content of pentosans that amount to approximately 5% and are the principal source of furfural. Forty two experiments were carried out on laboratory scale, employing different working conditions, in particular varying the time of hydrolysis, processing temperatures and the quantity of acid. The working times were 3, 4 and 5 hours and the temperatures 100° and 121° C respectively. Concentrated commercial sulphuric acid was used, generally in quantities of 125,150,175 and 200 ml. per 500 g of the avocado residue. The optimal yield obtained from the above mentioned material was 3% of furfural calculated on the basis of dry residue, a quantity which probably could be increased by applying temperatures above 121° C during the hydrolysis, reducing the time of the hydrolysis below 3 hours and diminishing the concentration of sulphuric acid
