Abstract: The aim in this work was to study the heat transfer occurring when a porous food particle is heating by hot water flowing through a pipe and in an agitated water bath. For that, temperature changes at the center of cylinders and cubes of potato and carrot were registered for different temperatures, flow rates and arrangements. Timetemperature curves were constructed in function of gathered data, slope and intercept calculated from linear section of the curve which were used to find the liquid to particle heat transfer coefficient utilizing analytical equations. Adimentional correlations among Nusselt, Reynolds and Prandtl numbers such as Nu = 2 + a Re 0,8 Prl/3 were obtained with correlation coefficients R greater 0,92.
